 Chicken fricasee recipe

Ingredients
- 1.5 kg —- chicken, small pieces & seasoned with salt & pepper
- 90 gms —- butter
- 2 cloves —- garlic, crushed
- 1 large —- onion, chopped
- 250 ml —- water
- 375 ml —- chicken stock
- 125 gms —- sliced mushrooms
- 40 ml —- flour
- 125 ml —- milk
- 125 ml —- cream
- Salt & freshly-ground pepper, to taste

Chicken Fricassee Preparation:
- Heat 60 gms butter in a saucepan & sauté chicken till light brown on all sides.
- Add garlic, onion, water & chicken stock.
- Bring to a boil & simmer till tender.
- Remove chicken from the pan & keep aside.
- Heat remaining butter in another pan & sauté mushrooms for five minutes.
- Drain.
- Mix flour & milk together, add it to the chicken sauce mixture.
- Stir until the mixture thickens.
- Return chicken pieces to the pan & add mushrooms.
- Heat through, season & add cream.
- Serve with rice.
