Ingredients:-
- 6 ears white corn, husked & cleaned
- 3 tbsp melted butter
- 1/3 cup fresh lime juice
- ½ red bell pepper, diced
- Tomatoes cut into small pieces
- Salt, to taste
- 1 tsp cracked black pepper
- 2 tbsp chopped fresh parsley
- 2 tbsp garlic powder

Preparation:
- Preheat a grill for medium high heat.
- Grill corn (for about eight minutes) until the kernels are tender & have browned in spots.
- Set aside until cool enough to handle.
- Whisk together the melted butter & lime juice in a large bowl.
- Slice the kernels off the corn & place into the bowl along with the red pepper & tomatoes.
- Season with salt, pepper, parsley & garlic powder.
- Toss until well combined.
