Corn Salad recipe

Ingredients:-

  • 6 ears white corn, husked & cleaned
  • 3 tbsp melted butter
  • 1/3 cup fresh lime juice
  • ½ red bell pepper, diced
  • Tomatoes cut into small pieces
  • Salt, to taste
  • 1 tsp cracked black pepper
  • 2 tbsp chopped fresh parsley
  • 2 tbsp garlic powder

Preparation:

  1. Preheat a grill for medium high heat.
  2. Grill corn (for about eight minutes) until the kernels are tender & have browned in spots.
  3. Set aside until cool enough to handle.
  4. Whisk together the melted butter & lime juice in a large bowl.
  5. Slice the kernels off the corn & place into the bowl along with the red pepper & tomatoes.
  6. Season with salt, pepper, parsley & garlic powder.
  7. Toss until well combined.

Ingredients:-

  • 1 packet —- baby corn
  • 10 —- mushrooms, sliced
  • 2 cups —- milk
  • 1 tsp —- pepper powder
  • 3 tsp —- butter
  • 1 cup —- finely-chopped spring onion
  • 2 —- green pepper, finely chopped
  • 2 tbsp —- fresh cream, beaten
  • Salt, to taste

Food preparation:

  1. Heat butter in a saucepan & sauté spring onion for three minutes.
  2. Add green pepper & sauté it till well-coated.
  3. Add pepper powder, baby corn, mushroom, milk & salt.
  4. Let it simmer till corn is cooked.
  5. Add cream & serve.
  6. Serve with chapattis.

Ingredients:-

  • ½ cup —- corn kernels
  • 2 —- big potatoes (boiled)
  • 2 —- onions (chopped)
  • ½ cup —- capsicum
  • 2 ½ cm —- ginger (chopped)
  • Salt to taste
  • Oil for deep frying

Food preparation:

  1. Without using any water, crush the corn kernels in a grinder to get a coarse paste.
  2. Mix this coarse paste with potatoes, onion, ginger, capsicum, green chilies & salt.
  3. Divide the mixture into equal portions & shape them as kebabs.
  4. Heat oil in a pan & deep fry the kebabs until they turn golden & crisp.
  5. Take them out with a slotted spoon.
  6. Drain excess oil on kitchen tissue.
  7. Serve hot with sauce or mint chutney.
