Grilled shrimp recipe

Ingredients:-

  • 3 —— ripe tomatoes, quartered, seeded & finely chopped
  • Half —— cucumber, finely chopped
  • 1 —— red pepper, seeded & finely chopped
  • 3 —— cloves garlic, finely chopped
  • 2 —— shallots, peeled & finely chopped
  • 3.5 —— cups tomato juice
  • 2 tbsp —— red vinegar
  • ½ tsp —— sugar
  • 1 tsp —— olive oil
  • ¼ tsp —— salt
  • Freshly ground pepper, to taste

For grilled shrimp)

  • ½ kg —— shrimp, peeled & divined
  • 2 tbsp —— fresh lemon juice
  • 1 tsp —— olive oil
  • 1 —— clove garlic, minced
  • 1/8 tsp —— cayenne
  • 1/8 tsp —— zeera

Food preparation:

  1. Mix together tomato, cucumber & red pepper.
  2. Add garlic & shallots stir in tomato juice, vinegar, oil sugar, salt & pepper cover & allow chilling several hours or overnight.
  3. Place shrimps remaining ingredients in bag & squeeze gently to coat shrimp evenly refrigerate about 30 minutes.
  4. Drain & discard marinade skewer shrimp preheat grill to medium-heat or allow coals to burn down to white ash.
  5. Spray grill grate with non-stick spray coating.
  6. Grill shrimps 3-4 minutes per side or just until shrimp are done and turn pink; do not over cook.

Prawns with Eggs

Ingredients:-

  • 200 gms —– Prawns
  • 3 —– eggs
  • One third cup —– Water
  • Half tsp —– Salt
  • Half tsp —– Cornflour

Method:

  1. Wash the prawns & open them from the middle like a butterfly.
  2. Wipe dry & place on the plate.
  3. Mix the remaining ingredients to make the seasoning.
  4. Pour it over the prawns & steam for 10 minutes.
  5. Bake in a preheated oven till golden brown.

Steamed Prawns

Ingredients:-

  • 4 —— Jumbo prawns wash, slit into butterfly shapes, deveined & wiped dry.
  • 4 tsp —— chopped garlic
  • 1 —— stalk spring onion, cut into rings
  • 2 tbsp —— oil, heated

For the marinade:

  • Half tsp —— each, salt & sugar Pepper, to taste

For the sauce:

  • 2 tbsp each —— soy sauce & water

Method:-

  1. Mix all the ingredients for the marinade & marinate prawns for 30 minutes in it.
  2. Steam for five minutes, wipe dry & keep aside.
  3. Deep-fry 2 tsp garlic & mix with remaining garlic & spring onion.
  4. Mix the sauce ingredients & pour it over the prawns.
  5. Pour the oil over & serve immediately.

Ingredients:-

  • 200 gms —— Pasta
  • 80 gms —— Salmon fillet
  • 50 gms —— Mushroom, sliced
  • 30 gms —— Gorgonzola cheese
  • 100 ml —— cream
  • 120 ml —— olive oil
  • 10 gms —— Basil Salt & pepper, to taste

Method:

  1. Boil pasta with water & olive oil and cool in iced water. Do not overcook.
  2. Steam salmon fillet & cool. Then crumble in to big chunks.
  3. Prepare sauce with cream & cheese, bring them together to a boil & add in sliced mushrooms & reduce to half.
  4. Season with salt & pepper & then add in pasta.
  5. Garnish with salmon & basil leaves.

Prawns in Hoisin sauce

Ingredients:-

  • 300 gms ——- Tiger prawn
  • 50 gms ——- Hoisin sauce
  • 20 gms ——- Shallot
  • 15 gms ——- Capsicum red
  • 20 gms ——- Green bell pepper
  • 15 gms ——- Chili oil
  • 5 gms ——- minced garlic
  • 5 gms ——- minced ginger
  • 150 gms ——- Chicken stock
  • 3 gms ——- Dried long chili
  • Salt & Pepper ——- to taste
 

For garnish

  • 25 gms ——- Leeks

Method:-

  1. Wash and clean the prawns and set aside.
  2. Heat the wok and pour in the oil. Sauté minced garlic, ginger, and dry chili for five seconds.
  3. Add prawns and stir for 15 seconds over low flame.
  4. Add the remaining vegetable and toss. pour Hoisin sauce and chicken stock and let it boil.
  5. Simmer for about one minute; add salt and pepper to taste.
  6. Garnish with leeks.

Shrimp tempura

Ingredients:-

  • 1 cup —– Sifted flour
  • 1 cup —– Ice cold water
  • 1 egg yolk
  • 2 tbsp —– Soy sauce
  • 1 pound —– Large shrimp, peeled and divined
  • Vegetable oil for frying
 

Method:-

  1. Prepare the batter by mixing together the flour, water, egg yolk and soy sauce.
  2. Heat oil in a wok or deep fryer. Dip shrimps into the batter one by one and fry in the hot oil till lightly browned.
  3. Drain shrimps on paper towel.
  4. Serve.

Pasta with seafood

Ingredients:-

  • 250 gms —– Linguini, cooked
  • 50 gms —– chopped onion
  • 300 gms —– mixed sea food
  • 10 gms —– each, chopped garlic and chopped parsley
  • 150 gms —– cherry tomatoes chopped
  • 50 ml —– Tomato sauce 
  • 40 ml —– extra-virgin olive oil
  • salt and paper, to taste
 

Method:-

  1. Heat olive oil in a frying pan and sauté onion, garlic and seafood.
  2. Add tomato and tomato sauce, cook for 15 minutes on low heat and season to taste. keep aside.
  3. Add pasta and toss well for a minute on low heat.
  4. garnish with parsley.

Prawns with snow peas

Ingredients:-

  • 12 ——- Prawns, peeled and divined with tail intact
  • 1 ——- onion, chopped
  • 100 gms ——- snow peas, trimmed
  • 2 tbsp ——- Oil
  • Quarter cup ——- Satay sauce

Method:-

  1. Heat oil in a pan, sauté onion and snow peas for a minute.
  2. Add prawns & cook till color changes.
  3. Seasons with satay sauce and serve with fresh salad

Seafood cheese spring roll

Ingredients:-

  • 200 gms ——– Shrimps
  • 50 gms ——– Crab sticks
  • 300 gms ——– bean thread noodles
  • 20 gms ——– Red bell pepper
  • 10 gms ——– spring onion
  • 50 gms ——– White cabbage
  • 100 gms ——– Beans sprout
  • 15 gms ——– Salt
  • 5 gms ——– Sugar
  • 1 Pinch ——– white pepper
  • 30 gms ——– Red onion and carrots
  • 60 gms ——– Cheddar cheese grated
  • 5 ——– Lumpia wrapper
 

Method:-

  1. Heat the wok. Turn off the flames and pour in the garlic oil.
  2. Sauté onion until it becomes light brown, add the seafood ingredients and toast for a minute.
  3. Add the vegetables and seasoning and cook for two minutes.
  4. Transfer the mixture into a colander. Drain for a minute and cool.
  5. Wrap the fillings in the Lumpia wrapper. Place wrapped spring roll in food keeper with cover. Store in chiller.
  6. Take out when you are ready to fry it.

Fish in banana Leaves

Ingredients:-

  • 750gms ——- Pomfret fish fillet
  • 3tbsp ——- Lemon juice
  • 1tsp ——- Salt
  • 1tsp ——- Cumin (zeera) seeds
  • 2tbsp ——- Coriander seeds
  • 1 clove ——- Garlic, crushed
  • 2 ——- green Chilies, seeded and chopped
  • 2tbsp ——- Coriander leaves, chopped
  • 4tbsp ——- Dried coconut
  • 3tbsp ——- White vinegar
  • 1tsp ——- Sugar
  • 3tbsp ——- Oil
  • Banana leaves, cut in squares or foil squares.

Method:-

  1. Mix the lemon juice with little salt, rub on to the fish and leave for 30 minutes.
  2. Dry- roast the cumin (zeera) & coriander & crush coarsely.
  3. Combine the garlic, green chilies, powdered coriander & cumin, fresh coriander, coconut, salt, vinegar & sugar.
  4. Coat the fish fillets with the mixture & divide between the foil squares ( or banana leaves
    squares), brush with oil; fold over to seal the edges.
  5. Place the packets on baking tray & bake at 190 degrees C for about 20 minutes till done.
